With Christmas a week away, one delectable tradition takes centre stage on tables across the globe – Christmas ham. At the Found Hope Store, we offer exquisite Gammon Slippers, allowing you to craft the perfect ham this holiday season. Here’s our exclusive method to cook ham, the Found Hope Store way.

Ingredients:

  • 1.5 – 2KG Gammon Slipper

    Mirepoix:
  • 1 Carrot
  • ½ Leek
  • 1 Medium Onion
  • 1 Stick Celery
  • 1 Bay Leaf
  • 6 Cloves
  • 1 Star Anise
  • 5 Allspice Berries

    ½ Teaspoon each of:
  • Coriander Seeds
  • Fennel Seeds
  • Thyme
  • Rosemary
  • Tarragon
  • Peppercorns
  • Mustard Seeds

Cooking method for ham

  1. Place the Gammon Slipper in an ovenproof pan, ensuring it’s a snug fit and not excessively large. Pour cold water over it till it’s covered.
  2. Preheat the oven to 80 degrees.
  3. Bring the gammon to a boil, skim off any impurities, and then reduce the heat to medium.
  4. While the gammon is coming to a boil, prepare the Mirepoix of vegetables and spices.
  5. Add the Mirepoix and spices to the gammon, then cover with greaseproof paper.
  6. Place the pan in the oven and cook overnight.
  7. In the morning, take the Gammon Slipper out of the oven, bring it back to a boil, turn off the heat, and let it cool in the liquid.
  8. Once cooled, place the gammon in the fridge in the liquor.
  9. Slice the ham as needed when ready to serve.
  10. Save the liquid to make Peas Pudding or our favourite, a Split Pea and Ham Soup.
