In 2023, we at Found Hope Store have made an attempt to expand our “Made By Us” produce, driven by our core value of sharing exceptional food with our friends and family. A major success in this endeavour is our meticulously crafted Kimchi – a culinary delight born from seven iterations (probably more than that but we got tired of counting eventually), each refining its flavour profile. The result is a Kimchi brimming with umami, a spirited chilli kick, and crispy and crunchy cabbage.
Chef Nick, the orchestrator of this triumph, explained, “We intentionally designed our Kimchi to have a kick. Often, when purchasing Kimchi elsewhere, we found ourselves adding extra chilli and Gochujang to achieve the depth of flavour we craved.”
Building on this victory, we ventured into the realm of a vegan version. Overcoming the challenge of omitting shrimp paste and fish sauce, we employed a blend of Kombu, Shiitake mushrooms, and slow-roasted tomatoes for a rich umami flavour. To give it a unique profile, whole radishes were introduced, adding a delightful twist to the classic Kimchi experience.
