Chicken, leek & maitaki mushroom pie

Valentine’s Day is a few days away and we decided to make your Valentine’s feast extra special with a special pie ideated and crafted by our very own chef, Nick. The Chicken, Leek and Maitake Mushroom pie can be comfortably shared between you and your valentine. As a special treat, we are sharing the recipe and magic behind preparing this one-of-a-kind pie with our patrons.

Ingredients for the Chicken, Leek and Maitaki Mushroom Pie:


For the Filling:

  • 700g Cumbrian of cooked chicken boneless
  • 100g Maitake (Hen of the Woods) mushrooms, cleaned and chopped
  • 2 leeks, sliced
  • 2 cloves garlic, minced
  • 30g butter
  • 360ml Found Hope chicken stock
  • 120ml Jersey double cream
  • 30g plain flour
  • 1 teaspoon chopped tarragon/chives/Parsley
  • 1 teaspoon wholegrain mustard
  • Salt and pepper to taste

The puff pastry for the pie crust is available in our store.

Steps to prepare the filling:

  • In a large frying pan, heat olive oil over medium flame. Add the diced chicken and cook until
    brown.
  • Once the chicken is brown, remove it from the pan and keep it aside.
  • In a second frying pan add a few drops of oil to gently fry the leek and garlic. SautĂ© until leeks are softened.
  • Add Maitake mushrooms to the pan and cook until they release their moisture and turn golden brown.
  • Sprinkle flour over the vegetables and stir to coat.
  • Gradually whisk in chicken stock. Cook while stirring constantly until the mixture thickens and has no
    lumps left.
  • Add the cooked chicken to the pan and add the cream. Season with herbs, mustard, salt, and
    pepper.
  • Stir well and let it simmer for a few minutes. Remove from heat and let the filling cool.

To assemble the pie:

  • Preheat your oven at 200°C.
  • Pour the cooled-down chicken, leek, and Maitake mixture into the pie dish.
  • Roll out the puff pastry and place it over the filling. Seal the edges and cut slits on the top for
    steam to escape.
  • Brush the top of the pastry with an egg wash for a golden finish.
  • Bake in the preheated oven for about 20 minutes or until the crust is golden brown and the filling is piping hot.

Serve this delicacy with your choice of potatoes (we love Pink Firs) and seasonal vegetables.
