Special Feijoada Recipe for Rainy February

Feijoada

This week our very own Chef Nick delighted our patrons with a popular Brazilian classic consisting of black beans and meat. Our feijoada has become a favourite with our patrons. So, we decided to share our secret recipe for you to recreate this bowl of delicacy in your own home.

Ingredients for Feijoada:

  • 450g black beans, dried
  • 450g smoked sausage
  • 450g pork belly, cubed
  • 450g beef shin, cubed
  • 450g bacon, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 950ml water
  • Salt and pepper to taste

For Serving:

  • Cooked white rice
  • Chopped fresh Coriander or parsley and Spring Onions

Instructions:

  1. Prepare the Beans:
    Rinse the black beans under cold water and soak them overnight in a large bowl covered with water. Alternatively, you can use the quick soak method by boiling them for 5 minutes, and then letting them soak for an hour off the heat. Drain and set aside.
  2. Cook the Meats:
    In a large pot or Dutch oven, cook the bacon over medium heat until it releases its fat and starts to brown. Add the sliced sausage and cook until it’s lightly browned. Add the cubed pork shoulder and beef to the pot, season with salt and pepper, and cook until browned on all sides. Remove from the pan and keep to the side. Remove excess fat if necessary, leaving about 2 tablespoons in the pot.
  3. Fry the onions, and garlic in the fat:
    Add the chopped onion, minced garlic, and bay leaves to the pot with the meat fat. Cook until the onion is translucent and aromatic.
  4. Combine Everything:
    Return the cooked meat to the pot. Stir in the soaked black beans and bay leaves. Pour in the water, making sure it covers all the ingredients. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 2 to 3 hours, or until the beans are tender and the meats are fully cooked. Stir occasionally and add more water if needed to keep the beans covered.
  5. Serve:
    Once the Feijoada is ready, taste and adjust the seasoning if needed. Serve the Feijoada hot over cooked white rice.
    Garnish each serving with fresh coriander, parsley and spring onions.
